With Thanksgiving upon us, many hunters are planning their biggest hunting trips this holiday weekend, hoping to fill the freezer with big game and the winter nights with terrific tales.
The place to go to process nature’s bounty for many area hunters is Wilson County Wild Game Processing, right here in La Vernia. Gary and Cheryl Ramsey offer a full service, including drop-off and pick up available 24 hours a day, seven days a week.
This aspect of their business was established in 2007, along with their meat market. The Ramseys offer a one-week turn-around on all processing, except dry sausage, in a purpose-built facility designed specifically for processing game. You are guaranteed to get your deer meat back, not anyone else’s.
Game can be processed into dry or fresh sausage, summer or breakfast sausage, buck stix, jerky, smoked sausage, and ready-to-eat sausage, as well as butcher cuts. Prices range from 75 cents per pound for general processing to $3.25 per pound for dry sausage.
“Our prices are comparable, but [there is] no comparison to our service and turn-around time,” Cheryl said. “We have customers who drive more than 100 miles to our facility.”
But they don’t just process game. Wilson County Wild Game Processing is “your one-stop game drop,” Cheryl said. “We can take care of your taxidermy work, also.”
The Ramseys credit their personal, hometown service and attention to detail for the high rate of customer satisfaction and positive feedback from customers, along with the large number of referrals they receive.
“Competitors thought this business would not support itself in just deer processing in a small town like La Vernia,” Cheryl said. “We have proven our success. It’s a great feeling to see so many loyal customers who travel the distance to get great products and customer service.”
Gary is a graduate of La Vernia High School with 21 years of experience in processing. Cheryl graduated from Uvalde High School and Texas State University and is a former teacher in the La Vernia Independent School District. They and their son, Breiten, enjoy hunting and fishing and have turned their passions into a thriving business.
“We wanted to have a career in the hunting industry,” Cheryl said. “This seemed to fit. We love what we do!”
