Market combines fresh meat with old-time atmosphere
GREGORY RIPPS Fully stocked shelves offer an ample selection of grocery products, in addition to the array of meats at Pruski’s Market.

There is a time warp near the intersection of U.S. 87 and F.M. 1628.

A person need only walk through the door of a market there to be transported back in time a time when grocery aisles were shorter é when employees and customers knew each other é when a shopper didn’t feel rushed or intimidated by a crowd.

The experience brings back childhood memories of shopping with a mother or grandmother, but fresh products and modern packaging remind us we are in the present.

Shelves are neatly stacked, and the refrigerated areas well-stocked with cheeses and meats especially meats. A customer passes by, carrying something wrapped in butcher paper. There is a whiff of sausage in the air. Yes, sausage.

It’s all part of the customer experience at Pruski’s Market.

“We try to make everyone have a good experience,” owner Edmond Pruski Jr. said, noting his slogan, “Quality you remember with service you deserve.”

“We want to keep that tradition going,” he said.

Pruski has owned the store almost 11 years. Before that, he worked in an uncle’s store in Kosciusko and later operated the meat section of Baumann’s Super Market in La Vernia.

He learned to make sausage from his father, Edmond Sr.

“Growing up on a farm, I can’t remember when we didn’t slaughter cattle or pigs for sausage,” he said. “I use the same basic recipe I grew up with.”

He said he uses his own spices and seasonings and no preservatives and strictly adheres to or exceeds U.S. Department of Agriculture guidelines.

One of the store’s “flagship products” is Pruski’s fresh Polish wedding sausage or biala kielbasa.

The store also offers grass-fed beef from local ranches, raised without synthetic growth hormones or antibiotics. Other products include pork cuts, fish, poultry, elk meat, buffalo meat, quail meats, whole roasting pigs, grill-ready items, and deli meats.

Some meat products, including jerky and snack sticks, are available outside Pruski’s Market; the Pruski label can be found in other Texas outlets, including Valero Corner Stores.

“I always wanted to make a product to sell to other facilities,” he said.

Certain items also can be purchased online and shipped nationwide, and to U.S. troops overseas.

Pruski’s Market also prepares custom orders.

“We can do sides of beef or pork with a medieval theme or a Mexican or a Polish theme,” he said. “We do some catering, but normally we prepare the orders here and [the customers] pick them up.”

Most customers still like to come into the store.

“Some people come in once a month to load up their freezers,” he said.
